Boneheads recipes .....

Post by peter birch » Fri May 12, 2017 8:00 pm

I knew what was ahead when it comes to cooking at Exmouth escape resort.RE not the best cooking appliances for the masses,
I took up my pizza stone and cooked a couple of pizzas combining basics ingredients in corporating fish/squid as the basic.
If anybody( read not a chief ) had a fast basic recipe to cook after a day's fishing, please put up and share so we can all have different experience great food .

I'll start with ,
Bottle tomato paste
Pack chorizo or any pre-packed salami
Baby Spenish?
Bottled peppers drained and dried on paper towel
Danish feta or equivalent
Squid prices or any fish spicies(trevally or permit 🤗🤗💤💤)
Pre made pizza bases (hard to find in outer bum fcuk Exmouth)
Taking my pizza stone helped otherwise impossible, not entirely.
Keep it simple

Got to my unit discovered no oven or hotplates eeep! I am paleo so that makes things difficult but i found a big tray that could fit in the tiny bbq and started prepping breakfasts and lunches. Paleo salmon frittata, high in protein, just throw a square in a lunch box with salad. You can sub any ingredient to your fancy. This will serve heaps!

24 eggs
2 large cans of sockeye salmon
Red onion diced
Red and green capsicum diced
Tomatoes diced
1/4 to half a head of brocolli chopped up a bit
A whole bunch of cilantro or dill chopped
Capers if you are fancy
Half a small bag of baby spinach
Teaspoon paprika
Teaspoon chilli powder if u like
Salt & pepper

Grease the tray, drain salmon and make a layer on bottom, whisk eggs with the s & p, paprika, chilli. Add your veggies and stir it up then pour mixture ontop of salmon and put in pre heated bbq. I left lid slightly open as it would not close but i baked it in there till it was cooked. Here is one i prepared earlier using what i had on hand like green onion and asparagus served with bio food and salad.

My advice..take a decent size saucepan, nothing there big enough to cook rice for 4 ... maybe take 2 ! Also a good size frying pan or wok would be useful.
